Protein Lemon Squares (GFCF)

Lately I’ve been playing with the idea of adding bean puree to lemon bars, so that they make a better school snack for E. and S.  Adding the fiber and protein in beans makes the sugar in a treat enter the bloodstream more slowly, so that the happy eaters don’t end up with a blood sugar spike and crash.

I love the recipe from Tea Biscuit, but needed to do some adapting to avoid some additional food sensitivities.  Here’s the recipe I came up with:



175 g. coconut oil

75 g. sugar (about

250g. gluten free flour mix  (I used 1 cup brown rice flour and 1/2 cup tapioca starch)

2 tsp guar gum

1/2 tsp gluten, corn, and aluminum free baking powder (We buy ours locally at Planet Organic)

Lemon Topping

200g sugar (1 cup) or replace with 1/2 cup honey  (This is a significant reduction from the original recipe.  I want my kids to like the lemon bars, but not TOO much!)

1/2 cup fresh lemon juice

2 T lemon zest (optional, but I wanted some seriously lemony bars!)

1 cup white bean puree (

4 large eggs

30 g (1/4 cup) gluten free flour (choose from potato, tapioca, arrowroot, or sweet glutinous rice flour)

I’m not into detailed cooking instructions:

  1. Mix all crust ingredients, press into 9×12 baking dish and bake for 5 minutes
  2. Mix all lemon topping ingredients, pour on top of crust, and bake till the edges of the crust start to turn golden.
